5 Gallon All Grain Recipe:

Grain Hops Additives Yeast
7 # 2 Row 2 Oz Cascade Pellets (60 Min) 1 Tbl Yeast Nutrients (15 Min) Wyeast #2278, Czech Pils
0.75 # German Light 1 Oz. Hallertau Pellets (30 Min) 1/4 tsp. Irish Moss (10 Min)  
0.25 # Wheat 2 Oz. Saaz Pellet (10 Min)    

Directions:

Add crushed grains to 3 gallons of water heated to 130 F, stirring constantly. Let rest for 30 minutes. Heat mash to 155F, stirring constantly. Let rest for 30 minutes, stirring every 10 minutes. Heat mash to 175F, stirring constantly. Sparge until 6 gallons of wort have been collected. Boil wort for 1 hour, adding the Cascade hops at the start of the boil, the Hallertau pellets 30 minutes into the boil, Saaz pellets 50 minutes into the boil. Add yeast nutrients 45 minutes into the boil, the Irish moss 50 minutes in to the boil. Cool wort to approximately 70-75F and pitch 1 pint of yeast starter. Ferment in primary for 14 days, secondary 7 days. Original Gravity 1.041 - Final Gravity 1.008. Percent Alcohol 4.3. Prime with 1 cup of light dry malt before bottling.

Comments:

This was the brewer's first all grain batch. Although it was a shade on the cloudy side, it was extremely popular among my friends, especially those accustomed to lighter commercial beers. The next time this batch is brewed, the brewer may increase the original gravity by adding another 1/2 to 1 pound of 2 row grain to the mash.
