5 Gallon Extract/Specialty Grain Recipe:

Malt/Specialty Grains Hops (pellets) Additives Yeast
4# Bitter malt extract 2 oz Cluster (60 minutes) 1# Honey Wyeast #1968, London ESB
1# Light dry malt 2 Cascade (15 min) 1 Tbl. Yeast Nutrient  
1# CaraPils grain   1 tsp. Irish moss  
.5 # Wheat grain      
.5 # 20LV grain      
.5# Belgian Pilsner grain      

Directions:

Steep grains in nylon grain bags in 5 gallons of 155°F water for 30 minutes. Slowly raise the water temperature to 170° F. Remove grains from pot. Bring to a boil. Add extracts, honey and Cluster hop pellets.. Add Cascade hop pellets 45 minutes into the boil. Add yeast nutrient 45 minutes in to the boil, the Irish moss 50 minutes into the boil. Cool wort to approximately 70-75°F and pitch 1 pint of yeast starter. Ferment in primary for 4-7 days, secondary 7-10 days. Original Gravity 1.057 - Final Gravity 1.012. Percent Alcohol 6.1. Prime with 1 cup of light dry malt before bottling.

Comments:

Some liked this beer, some did not. If brewed again, the brewer will reduce the amount of honey to 0.5 pounds.
