3 Gallon Recipe:
Honey | Additives | Yeast |
7.5# Clover Honey | 3oz freshly ground ginger root. | Wyeast #3632, Dry Mead |
3 cinnamon sticks | ||
3 Camden Tablets | ||
1/4 tsp. nutmeg | ||
0.5oz cascade hop pellets | ||
1/4 tsp. Irish Moss | ||
0.5oz Yeast Nutrient |
Directions:
Bring 3 gallons of water to a boil. Add honey and boil for 30 minutes. Add yeast nutrient 5 minutes before end of boil. Cool to approximately 70-75°F and pitch yeast. Ferment in primary for 2 weeks, secondary 7 weeks. (Use glass carboys for both primary and secondary fermenters.) Original Gravity 1.084 - Final Gravity 0.998. Percent Alcohol 11.9. Bottle without priming. If a sparkling mead is desired, prime with 1/4 to 1/3 cup of corn sugar.
Comments:
This batch is still too young to properly evaluate. Recommend bottle aging for at least 1 year before drinking.
